Mama's Home Made Southern Biscuits and Cheese Biscuits

Ingredients:



2 cups Self - Rising Flour (White Lily)
(Pre-Sifted)


1/4 Cup Crisco 

1/4 Cup Butter

3/4 Cup Milk

Preheat oven to 400 degrees.  

Cut Crisco and butter into flour with a fork in a mixing bowl until well blended.
  (You may also use a sifter to help with this)



After these are well blended.  Add milk, a little at a time.  Add more milk if it is too dry and more flour if it is too wet.  Form a ball and sprinkle a little flour over it and gently roll it into a roll about 8 to 10 inches.  Pinch off enough dough to roll into a ball (about 2 tablespoons) with well floured hands.  Place on greased cookie sheet.  Repeat until all dough is used (about 8 to 10 biscuits)
Press each ball flat with your hands.  
Bake for 20 minutes or until browned.  
Brush with melted butter.

(The secret to soft, flaky biscuits is not to overwork the dough.  Stir until just blended.  The more you stir and knead, the gluten in the flour will make the dough tough!)

Cheese Biscuits

Add 1 cup of grated cheese to the above recipe and drop by tablespoonful onto greased cookie sheet instead of rolling by hand.
