Tropical Cake
Tropical Cake
2 cups all purpose flour
2 cups sugar
2 tsp baking soda
2 eggs
1 cup chopped pecans
1 cup shredded coconut
12 oz crushed pineapple with juice
Mix all ingredients together
Bake @ 350 degrees for 30 minutes
or until toothpick inserted comes clean.
Icing:
1/4 lb butter
8 oz sour cream
1 1/2 cup confectioners sugar
2 tsp vanilla
mix the icing ingredients together to ice cake once
cooled.
Double the icing recipe for layered cake.
